1 cup pumpkin seeds from a medium pumpkin (5-7 lbs) 5 T sugar 1/4 t coarse salt 1/4 t ground cumin 1/4 t ground cinnamon 1/4 t ground ginger pinch cayenne (or more if you’re daring) 1 1/2 T peanut oil Heat oven to 250 degrees, line baking sheet with parchment paper, spread seeds, bake until dry, stirring occasionally. Takes about 1 hr to bake. Let cool. In the meantime, mix all the ingredients in a bowl except the peanut oil and 2 T of the sugar. Put the peanut oil in a frying pan on high heat and add the cooked but cooled pumpkin seeds along with 2 T of sugar. Cook until sugar melts and seeds begin to caramelize, about 45- 60 seconds. Dump the seeds in your bowl of mixed spices, stir, let cool, and eat.
